Chicken Chimichangas

This is a fun recipe to try for Cinco De Mayo! I like to serve this with fresh salsa and guacamole!
8oz pkg. softened cream cheese
8oz. Pepper Jack cheese, shredded
1 1/2 Tbsp. taco seasoning
1 lb. cooked chicken, shredded
8 large flour tortillas
cooking spray
shredded cheddar cheese
green onions
sour cream
salsa
Mix together cream cheese, Pepper Jack cheese and taco seasoning.
Fold in chicken.
Divide among flour tortillas.
Fold in sides, and roll up each tortilla.
Lay seam side down on a large cookie sheet
Spray tops of tortillas with cooking spray. (this is what makes them crunchy)
Bake at 350 for 15 minutes.
Turn chimichangas over, and bake an additional 10 minutes.
Note: I like to garnish these with green onion, sour cream, queso and salsa.
