This is my mom's recipe. I'm not sure when she started making it. This is one she still makes when we go home for a visit because we all like it and it's easy to double for a large family gathering! Over the years I have added a couple of ingredients to our taco salad. My family does not like olive, but for those of you who do you can add them. I also like black beans in mine, but since most of my kids don't I typically leave them out! There are so many ways you can make this recipe your own! Enjoy!
Serves 6 8c. romaine lettuce
1 lb ground beef or turkey, browned
1 package taco seasoning
2-4 tomatoes chopped
2-3 avocados chopped
grilled corn (optional)
2c shredded cheese (more if you want it extra cheesy)
1 bag Doritos broken up a bit
1 bottle Catalina Dressing
Directions
1. In a skillet, brown beef and drain. Add the taco seasoning to
the beef and set aside to cool.
2. In a large bowl, combine lettuce, tomatoes, avacados, grilled corn and shredded
cheese.
3. Prior to serving, add cooked ground beef and Doritos
4. Drizzle salad dressing over salad mix and toss salad until
the desired amount of dressing is used.
